2 cinnamon sticks
2 bay leaves

Fried cashews and raisins for garnish (optional)
Method
Wash and soak the rice for 20 minutes. Drain and keep aside.
Wash and marinate the chicken pieces with salt, red chili powder, turmeric powder, and garam masala powder for 30 minutes.
Heat oil in a large pot or a pressure cooker over medium-high heat. Add the cloves, cardamoms, cinnamon sticks, and bay leaves and fry for a few seconds.
Add the onions and green chilies and fry until golden brown.
Add the ginger-garlic paste and sautà for a minute.
Add the mint leaves and coriander leaves and sautà for another minute.
Add the marinated chicken pieces and mix well. Cook for 10 minutes, stirring occasionally.
Add the water and bring to a boil. Check the salt and adjust if needed.
Add the soaked rice and mix well. Cover the pot or the pressure cooker with a lid and cook on low-medium heat for 15 minutes or until the rice and chicken are done. If using a pressure cooker, cook for 2 whistles and then release the pressure naturally.
